Cucumbers were thought to have originated in India and then spread to China around 100 BCE. Today Old cucumbers are commonly found in markets in Southeast Asia, China, and Korea, and can occasionally be found at specialty grocers in the United States.
Old cucumbers are large in size, roughly 15 to 20 centimeters long. The outer skin is yellow to golden-brown in color, and has a wrinkled, rough and leathery texture. The inner flesh is a pale white-green and is soft but toothsome, reminiscent of the young cucumber. Old cucumbers have a mild, slightly grassy flavor but may have some bitterness around the seeds and outer flesh. Each fruit contains numerous fibrous white seeds, which should be removed before consumption.
